Bruschetta alla Romana – serves 4
INGREDIENTS:
4 thick slices of good quality bread
4 large gloves of garlic - peeled
2 tablespoons of extra virgin olive oil
2-3 large ripe tomatoes – chopped
4 leaves of fresh basil – chopped finely
8 leaves of rocket
Salt and pepper
*Mix the tomatoes and basil in a bowl
*Toast the slices of bread until golden and crisp
*Take a sharp knife and make little slashes across each one
* Rub in the garlic in and drizzle with olive oil
*Spoon the tomato and basil mix on top of the toast
*Add a little salt and pepper to taste
*Garnish with rocket

Pasta Primavera – serves 4
INGREDIENTS:
400 grams of butterfly pasta
1 soup spoon of butter
1 clove of garlic – minced
1 medium size onion – chopped finely
100 grams mixed peppers ( green, yellow and red) - thinly diced
1 small courgettte – thinly diced
100 grams fresh peas
50 grams champignon mushrooms – thinly diced
1 mozzarella cheese – cut into small cubes
1 expresso cup of white wine
1 packet of single cream
Half cube of knorr to make large cup of vegetable stock
Salt and pepper

grated parmeggiano cheese
*Melt the butter in a pan and add the onions and garlic
* Cook on medium heat until the onions are transparent
*Add the vegetable stock, the rest of the vegetables and a little salt and black pepper.
*Bring to boil and simmer until the vegetables are tender and almost all the stock is evaporated ( between 8 to 10 minutes)
*Add the white wine and cook until the wine almost disappears.
*Gently stir in the single cream and mozzarella cheese
*Add to the cooked pasta, mix together and place in serving dish
*Add grated parmeggiano cheese
